A Manly Meal

I really enjoy cooking. I think it's relaxing and it's fun. But, as often as I cook and as much as I enjoy it, I don't think I'm that great of a cook. I love to experiment and try to create something delicious, but often it just tastes alright and I  plan for something else and make another attempt the day after.

Well, yesterday/last night I made something amazing! and I loved it so much I am writing my own recipe so anyone can recreate it!!!! (Lucky you)

Kelly's Bacon Wrapped Chicken Beeryaki


Marinade: (for 2 breasts)
1 bottle Pale Ale (I used Sierra Nevada, to rep the local brewery)
1 Tbsp Teriyaki marinade
1 Tbsp Vinegar
Pepper for taste

Chicken Dressings: (per chicken breast)
3 strips of bacon
1 jalapeno (sliced)
1/4 cup mozzarella cheese (sliced or grated)
1 sprig of rosemary

Ok, so first marinade the chicken breasts in a large bowl for about 3-5 hours. I used frozen chicken breasts, so I just put them in the marinade and let them thaw in it.

Once the breasts are done marinading pull them out and put them on aluminum foil in a 11x9 baking pan for dressing up in their bacon tuxedos.

Preheat the oven to 350 F.

Place the mozzarella on the chicken breast and then a few slices of jalapeno on the cheese. Then, careful not to spill the ingredients on top, wrap the chicken breast in the bacon, overlapping where the previous strip of bacon ends and make sure to use the whole 3 strips (it's key). You can use toothpicks to hold the bacon in place. You probably won't need them though. Then, garnish the chicken with the remaining slices of jalapeno and a sprig of rosemary.

Once the chicken is prepped and the oven is preheated place them in there and let them bake for about 20 minutes or until the chicken breasts look browned, then immediately set the oven to broil and broil the chicken for about 5 minutes or less to get the bacon all crispy.

Pull the chicken out and serve!
